You're all welcome...and yes, we love carbs here. So far so good, as far as weight issues go, but I know what you mean, Anna. I have a friend who lost major amounts of weight on the Atkin's diet (low carb) so it really works. Great job losing it and keeping it off! (I've noticed that you really have to stay on that diet or all the weight and more comes back)
What's sad, is how sad *I'd* be if I had to give up cooking this way. Food is such a "comfort" thing, not really so much pertaining to me being comforted by eating, but me being able to use it to bless others. Weird but true. If my dh or kids suddenly had to be on a special diet, that would be a true test to me. It would take away all my "fun" cooking-wise!

I could do better. However, I try to not to fry things very often...once in a blue moon I'll make donuts or fried chicken and that's really about it. Plus, our family eats way more fresh fruit and veggies than most of our friends...here in the mid-west, typically potatoes and corn are considered mainstay "vegetables" which cracks me up. If it's not got deep color, it's just fluff, right? ;O)

Sounds yummy.
I must stop reading your blog - just kidding!
The truth is - 2 years ago I put myself on a strict program of loosing my weight and I succeeded, I lost 16 kilograms (would translate into 35 pounds?). That meant to eat carbohydrate-low diet and exercising on a cross-trainer every day. So when I read about your delicious meals, I can only dream, because they are real carbohydrate bombs in my eyes...
Have a good meal, though!

Wow! Thanks for the potato recipe. What a great idea especially when we're not very hungry.
