Jeanne, I'm so glad you came by and took time to comment! ;O) You'll have to try the chicken enchiladas...I can't believe how GOOD they are...we're not normally into corn tortillas, but in this, they are perfect. Making these again today for lunch with my parents tomorrow.

I was disappointed that we never got to work together again at the farm! Maybe next year? Hope all is well with you and yours!

Hi Mary,
This is my first time visiting and I enjoy your writing style. I must say my mouth was watering as you talked about roasted red peppers and cheese or hummus. Yum! Sure wish we could get back down to help on the farm. Life is so busy. God bless!

Well, these aren't that hot, actually, or I'd be the only one eating them in this family! The Big Jim's are wonderful and only mildly spicy. At least the ones I've had so far. But I get you on them not agreeing with your tummy. My dh has the same prob with peppers. This afternoon I went ahead and ran a trial roast of 10 peppers...worked GREAT on broil in the oven. Only took about 5 minutes per side for the blisters to start to swell and blackening to begin. The damp towel trick works great too. My peppers are in the fridge...I'm planning that chicken enchilada recipe for tomorrow or Monday! Love you too Aunt Ruth!

Hey, What energy you have and I'm so glad for you. I don't have much of a taste for these hot kinds of peppers. So I stay clear of them. I should say they don't make my tummy feel so good. :) Pretty to look at though.

Great to hear from you. Love Aunt Ruth
