Garden Sauce with Fresh Veggies

ZucchineYesterday’s lunch was a veggie fest! I decided to share my impromptu recipe here after my middle daughter gave it the thumb’s up! She typically is the hardest to sell on squash!

Between my oldest sis and Farmer John, we have gotten a truckload of zucchini and yellow squash here lately. What a blessing! Especially as I ran out of room in my “fenced-to-keep-chickens-out” garden and didn’t plant any squash this year.

So to make this garden sauce, it’s okay to get inventive and do your own veggies…substitute broccoli and cauliflower and carrots, whatever you like…but if you halfway like yellow squash and zucchini, then you will LOVE this!

Garden Sauce for Pasta

  • 2 yellow squash, sliced and quartered
  • 1 med-large zucchini
  • 1 large onion
  • favorite seasonings–I use garlic powder, and Real Salt’s Organic Seasoning salt
  • 1 large tomato–preferably straight from the garden, burstingly red and so ripe so that the peel is about falling off…peel it and dice it
  • 1 cup mozzarella

In a large skillet saute the first three ingredients in olive oil till tender. Add seasonings and tomato, and mix well. Toss the mozzarella  into the mix and let it begin to melt. Serve over your pasta, or mix your pasta into sauce.

Delicious and easy!

Serves 5 as a side dish.

  1. Hi Colleen! Long time no see, I’ve been so absent from blog-land lately. Just find someone with a garden and I bet they’ll have a box of surplus they’d be delighted to share! I made this same recipe with tomato sauce added for spaghetti tonight. Mmm!

  2. From the ingredients I was not expecting anything too special but made it anyway to see what it was like.

    I have to say it was fantastic. I put the sause over some BBQ chicken which worked really well together.

    1. I’m not a good one to ask about sauteeing spaghetti squash as we love it so much baked…not sure, Geri! Sorry this answer was too late in coming…
