Brownies and other Ooey-Gooey Delights

Hard to be overly health conscious when these treats are in the house! My oldest first baked these brownies on May 17, 2009, to assuage the trauma caused me by the “vicious possum attack of ’09″…remember my sad tale,“Hard Life Knocks on the Farm”?

Anyhow…this brownie recipe has been asked for by three friends now, so I better get on the ball and post it here. Am also sharing my oldest’s recipe for “Ooey-Gooeys”…a no bake treat she first made with her Aunt Kimmy. Special memories!

Chocolate Chunk Pecan Brownies

  • 1 cup butter (okay, you can use margarine but it will turn to plastic in your liver…I’m just sayin’…)
  • 2 cups sugar
  • 2 tsp vanilla
  • 4 eggs, slightly beaten
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa
  • 1/2 tsp salt
  • 8 oz. semi-sweet chocolate, coarsely chopped (chocolate chips work)
  • 1 cup chopped pecans

Heat oven to 350*F. Grease 13×9 inch pan. In medium saucepan over low heat, melt butter. Add sugar, vanilla and eggs; blend well. Stir in flour, cocoa and salt; mix well. Add chocolate and pecans. Pour into greased pan.

Bake at 350*F for 30-40 minutes or until set. Cool completely. Cut into bars

Yield: 36 bars

Ooey-Gooeys (we always double this recipe!)

  • 12 TB crushed graham crackers
  • 4 TB honey
  • 8 TB peanut butter (we use sunbutter)

Mix all ingredients in a small bowl. Shape into golf-ball sized lumps. You should be able to make a dozen. Spoon onto baking pan lined with waxed paper. Chill in refrigerator for 30 minutes. Goes great with a glass of milk!

  1. I think what you really need is an official “taste tester.” I’m volunteering my services for the brownies, and as a standing offer for any future recipes as well. I can provide a 100 word minimum critique with many descriptive and tantalizing adjectives if you need something for advertising.

    The cooking/kitchen skills are definitely being passed down to your oldest daughter. I recently discovered another of her many skill sets, and told her she should add it to her growing resume’ – skidsteer operator. Handled the CAT like a real pro. Dogs, CAT, horses, wow, I am impressed! Farm girls know how to do lots of important things.

  2. Are you admitting to liking chocolate, Farmer John? I know your wife does… ;O) Thanks for the encouragement on my oldest…she does have a lot of interests! Sorry I missed your delivery last night!

  3. Well, I do have a weakness for brownies, that’s for sure! My wife refers to chocolate as “hormone therapy.” I’m sure there are lots of ladies that would agree with that analysis.

    I know a fellow that would always “make up” with his wife after a spat by buying her Hershey’s chocolate bars (instead of flowers). He sent me a photo once of her with a gargantuan Hershey’s chocolate bar that must have been 3 ft. long. Figured he must of done something pretty bad . . .

    Glad your girls are growing up in the country, learning such a wide variety of practical skills. Laura Ingalls Wilder would be proud.

  4. I love chocolate…but if I don’t have it in the house, I don’t miss it. Once in a while though, I get a huge craving for these brownies. Love the pecans and the chunks of chocolate…we’ll have to bring some over sometime and share! ;O)Funny chocolate story, btw. I’d prefer chocolate over flowers too–most times!

    I’m so glad for our country life, too! God is good to allow us these acres of privacy, critters galore and enough dirt for a garden and some chicken scratching!

  5. I distinctly remember delivering a very large bag of chocolate chips to your house just the other day. Inquiring minds want to know . . . are all those pounds of chocolate gone already, baked into brownies and other ooey-gooey delights? Or are they stashed in secret places? Or are they being rationed? Are you using them as tidbit nuggets and prizes for good behavior? Or are they finger food left in obvious places in plain sight? Chocoholics find ways to keep private stashes where no one else knows . . . in the junk drawer, under the bed, in the back of the fridge, and elsewhere.

  6. Yes…in fact, we still have the majority of those very nummy gluten/dairy/corn free European dark chocolate chips b/c I’m hoarding them for special occasions only! Occasions when I need a handful with almonds, for instance! ;O) I think we’ve only used about 2 cups, aren’t we good!?
